A true homage to the ancient winemaking traditions of the countryside, this Vin Santo is crafted from carefully selected grapes grown in the Chianti Classico region, which are then left to dry naturally. The process is deliberate and unhurried, with years dedicated to slow refermentation and decades of aging in small chestnut barrels, allowing the wine to develop unparalleled depth, complexity, and character.

Vinification
After a careful manual selection of the grapes, focusing on both ripeness and quality, the bunches are laid out on drying racks in the attic. Here, the natural air circulation promotes the drying of the grapes while protecting them from fungal attacks. Once the sugar concentration reaches the optimal level (approximately 4–5 months), the bunches are destemmed and pressed. The resulting must is placed in 55 and 110-litre small barrels, which are immediately sealed.

Description and remarks
After years of aging, this one-of-a-kind nectar displays intense aromas of apricot, dried fruit, nuts, and honey. On the palate, it reveals a velvety richness, with a balanced sweetness and a smooth, lingering finish. The well-integrated acidity enhances its freshness, offering a beautifully persistent aftertaste that enhances its complexity. Food pairings: pecan pie, chocolate cakes, surprisingly delightful with blue cheeses, but also excellent on its own.
