Description and remarks | |
The olive groves of the Alto Chianti alternating with the vineyards of Chianti Classico are the distinctive feature of our beautiful hills and are of very high value, not only agriculturally but also landscape-wise. The cold climate and temperature changes contribute to the creation of Extra Virgin Olive Oils from Tuscany. The olives are harvested daily and taken to the mill within 4 hours of harvesting. We use a 2-stage Mori Tem crusher, the best on the market. The extraction process is done cold, at temperatures strictly below 27°C. Within 24 hours the oil is filtered to preserve its characteristics over time. |
