The olive groves of the Alto Chianti are quite rightly considered one of the major riches of our area. Despite the climate not being particularly favorable, due to the possibly icy periods, and the little production per plant which is extremely low if compared to other Italian areas which always have been dedicated to olive grove cultivation, this extra-virgin olive oil is considered one of the best Tuscan products. In order to obtain a high-quality oil, the olives are hand-picked when they reach the perfect degree of ripeness and immediately taken to the oil mill. Here a grindstone is used and, by traditional "cold" processing, this rich tasting and perfumed oil with extremely low maximum acidity (~ 0,2%) is obtained. |
